INGREDIENTS FOR 2 PEOPLE :
- 400g monkfish fillets
- 80g bacon bacon slices
- A few sprigs of thyme
- Half a glass of white wine
For the sauce:
- 30ml di succo di limone
- 20ml olio EVO
- 100ml di brodo vegetale
- 4/5 grani di pepe rosa
- 5gr di farina di riso

PROCEDURE :
To start, prepare the lemon sauce:
- Pour the oil and lemon into a saucepan together with the pink pepper.
- Let it thicken for a few minutes over low heat.
- Sift the rice flour directly into the pan and mix well with a whisk to avoid the formation of lumps.
- Add the vegetable broth while continuing to mix with the whisk.
- Season with salt and continue cooking for a few minutes to reduce the sauce and make it creamy.
- Put out the fire and keep aside.
Then move on to preparing the monkfish.
- Cut the monkfish fillets into 4/5cm bitesize pieces and wrap them in the lard together with a sprig of thyme.
- Secure them with a toothpick and brown them in a non-stick pan without adding fat.
- Cook for 2/3 minutes per side, then deglaze with dry white wine and finish cooking for another 2 minutes per side.
Plate up the bites and garnish with the lemon sauce.
