Cheesecake with strawberry sauce

Today we offer you a recipe to prepare a delicious cheesecake with strawberry sauce.

The cheesecake recipe that I am proposing to you today was perfect for me. was recommended by a dear aunt of mine, an expert in making fantastic desserts.

Here are the ingredients :

  • 250 g of mascarpone
  • 250 g of ricotta
  • 100 g of sugar
  • 2 eggs
  • 1 bag of vanillin
  • 100 g of butter
  • 6 packs of pavesini

For the sauce

  • 400 g of strawberries
  • 2-3 tablespoons of sugar
  • juice of half a lemon

Procedure:

 

  • First you need to make the base of the cheesecake : in a non-stick saucepan melt the butter over low heat.
  • In the meantime, blend the pavesini with the help of a blender.
  • Combine the melted butter with the pavesini, mixing them well. Take a springform pan and butter it on the base and sides. Spread the mixture of pavesini and butter on the base, compacting it as best as possible with the help of a spoon, creating a layer of about half a centimeter and put it in the fridge.
  • In the bowl of the planetary mixer pour the mascarpone, ricotta, eggs, sugar and vanillin inside. Mix everything together until a smooth and creamy mixture is formed.
  • Remove the pan from the fridge and add the mixture.
  • Preheat the oven to 170° and bake the cheesecake. Cook for one hour. Halfway through cooking lower the oven temperature to 160°.
  • In the meantime, prepare the strawberry sauce: blend the strawberries with the sugar and lemon juice in a blender. Taste and add sugar if it is too acidic. Put the sauce in a bowl and keep it in the fridge.
  • When the cheesecake is ready, When ready, remove it from the oven and let it cool down to room temperature. Then put it in the refrigerator for at least 3-4 hours.
