BEEF FILLETS, RED WINE SAUCE AND GLAZED SHALLOTS

INGREDIENTS FOR 4 PEOPLE:

  • 4 beef fillets of 120 g each.
  • 12 shallots
  • 2 tablespoons sugar
  • 5 cl vinegar
  • salt

FOR THE RED WINE SAUCE:

  • 300 cc red wine
  • 100 cc port
  • 2 pieces of shallot no
  • 1 sprig of thyme
  • 3 grains of black pepper
  • a small piece of bay leaf
  • 50 g of butter

FOR THE RED WINE SAUCE:

Put all the ingredients in a saucepan, and cook reduce by 3/4

  • its initial volume and bind with a little cornstarch, pass through a fine sieve
  • set aside.

    In a pan, caramelize the sugar, add the shallots, the vinegar, a pinch of salt and simmer for about 20 minutes. IF during cooking the liquid will reduce; too much, add a few tablespoons of water.

    Cook the salted and peppered beef fillets in a pan with the salt and pepper. oil and the knob of butter. When desired, remove them from the heat.

    Heat the red wine sauce and ladle it with butter.

    Arrange the fillets on plates, the shallots on top and drizzle with the red wine sauce.
