INGREDIENTS FOR 4 PEOPLE):
- 120 g of sweet bacon
- 120 g of new salad
- 2 tomatoes
FOR THE DRESSING:
- 0,5 dl of balsamic vinegar
- 2 tablespoons of soy milk
- 1.25 dl of olive oil
- 1.25 dl of sunflower oil
- a pinch of salt
METHOD:
Dissolve the salt in the vinegar and the soy milk.
With the help of the immersion blender, emulsify the extra virgin olive oil and the sunflower oil.
Cut the tomatoes into cubes.
Cut the bacon and quickly sauté it in the pan.
Season the salad with the vinaigrette, arrange it on plates, put the bacon and tomato on top.
Drizzle everything with a little sauce.
