Global Knives: Sharp design from Japan

Our journey into the world of Japanese cutlery continues. The Global brand knives are a unique example on the market and have several characteristics that make them inimitable. Let's find out together what makes these knives so special.

Forging is a Japanese cultural tradition with deep roots that go back several centuries. Over the years, the Japanese people have transformed this technique into a real art, initially aimed at creating the most beautiful and fearsome swords made during the history of man, those of the samurai.

Global Japanese kitchen knives: innovation since 1985

The desire that drove Komin Yamada and mr. in 1985. Global Mino Tsuchida created the first series of Global knives was precisely that of put this age-old art at the service of the kitchen, creating knives that combine the most traditional forging techniques, the best materials available and an attractive and modern design.

Global has been producing knives for 33 years using the best stainless steel, Cromova 18, which is cold tempered and hardened up to C56-58 Rockwell through a process that guarantees a incredibly durable sharpening over time.
From a design point of view, the first thing you notice about the Global kitchen knives is; the absence of a gap between the blade and the handle, both in stainless steel. A jointless knife , in addition to differentiating itself from an aesthetic point of view from all the others, ensures standards of hygiene and cleanliness that are unique in the sector.

Even the blades are forged in an innovative way: unlike the classic European cutlery which has an almost "blunt" edge, the Japanese Global knives are sharpened in order to give life to a thread with a much steeper angle acute and, consequently, much more thin, which ensures, in addition to a resistance to wear that is decidedly greater than that of other products, ability to incredible cuts .

Like the samurai swords of the past, the Global kitchen knives are designed in detail to ensure unrivaled balance in the hand . The knife handle is empty and is filled with the quantity of sand capable of leveling in the most correct the weight of the blade.

From just twelve blades of the first series, in 33 years Global has expanded its production to every type of Japanese or European knife, with the aim of guaranteeing a perfect product for every chef – professional or amateur – and for every type of preparation.

Global knives - Bunmei series: all the quality of the blades combined with traditional Japanese aesthetics

The knives of the Bunmei line by Global follow the aesthetics and ease of handling of traditional blades which were forged by Japanese blacksmiths. The blades are produced to the same quality standards as and perfection of the other Global Japanese knives , but this series – unlike all Japanese knives produced by Global – It features a honki wooden handle which gives the kitchen an unmistakable oriental style.

In line with the aesthetics that make the Global Bunmei series a clear example of classic Japanese cutlery, the blades of the knives are sharpened asymmetrically on only one side, that is, with the wire moved laterally with respect to the center which produces a wider angle sharp on one of the two sides of the blade.
