Spring turrets

With the arrival of spring here is an original recipe, simple and quick to make!

INGREDIENTI:


  • 5 uova
  • 1 radicchio rosso
  • 5/6 piattoni
  • 1 caprino (vaccino o di capra)
  • 150gr Asiago
  • 2 Fette di pane in cassetta
  • Latte, Grana Padano grattuggiato, Olio, Sale, Pepe, Burro QB

PROCEDIMENTO:


  • Tagliare il radicchio e saltarlo in padella per 4/5 minuti (noi lo abbiamo saltato senza aggiungere olio in padella… yeah DrGreen! )
  • Tostare il pane da entrambi i lati su una piastra

  • Nel frattempo sbattere le uova con formaggio grattuggiato, latte, sale e pepe.
  • Add the sautéed radicchio to the mixture, then pour everything into the pan and cook for 7/8 minutes on each side (omelet)
  • While the omelette is cooking: boil the large plates for 5/6 minutes then quickly sauté them in the pan with a knob of butter, salt and pepper to taste and cut them into chunks.
  • Cut the asiago into cubes and set aside. 
  • Season the goat cheese with oil and black pepper.

  • omelette is ready, it is ready to cook. ready; take a pasta cup or a circular shape and cut it to obtain 8 disks of equal size. Do the same operation with the toasted bread and finally proceed with the composition of the turrets by alternating the layers in this way (from bottom to top):
  • omelette – bread – omelette – goat cheese – omelette – platters – omelette
