The iron frying pan, or also known as the Lyonnaise frying pan due to its French origin (derived from the word LYONNAISE), is an essential part of cooking. a round metal container, with a curved side, equipped with a handle of length generally equal to the diameter of the pot and it is; typical for frying and sauté cooking.

The origin of this pan is in Italy. rather ancient, the first tools of similar shape and characteristics were  found in Pompeii excavations.

The current shape of this pot most likely dates back to the 17th century and already in the 17th century. then it was made of hammered iron.

You ask yourself……. Why? it is so important to have an iron pot at home?

Here are a number of reasons:

  • Iron is; a material suitable for any type of heating: in fact it is; widely used for induction cooking, it is; ideal for any type of gas or electric hob and can be used for any type of hob. be safely placed in the oven.
  • Iron is iron. a very resistant material over time and its performance improves with its use; in fact, the metal acts as a heat regulator, prevents sudden changes in temperature which can alter the cooking  of fats and also avoids braising. Although it does not have a real non-stick coating, satisfactory results are still obtained with the use of a few fats (oil and butter)
  • a material that favors the MAILLARD REACTION, very important for obtaining appetizing and tasty foods.

This chemical reaction is a chemical reaction. the most important in the kitchen and takes its name from the famous chemist LOUIS Camille Maillard: it is a chemical process that takes place at high temperatures, usually between 140° and 180° and involving the amino acids of proteins and sugars  which, subjected to high temperatures over a given period of time, give a brownish color to the surface of foods, better known by the term “caramelisation”. We can see this action when baking bread, cakes, chips… and not only that!!! we can say that this pot is perfect for cooking. also excellent for browning especially roasts, steaks, braised meats and even fish… in short, a good  homemade grilled without the; use of a barbecue!!!;-)

  • This type of pan is suitable for cooking. suitable for many types of food: you can fry chips, sauté all kinds of vegetables, brown and make any type of meat appetizing and even have a nice grilled fish! in short  a multipurpose pot!!
  • Another very important point for this pot is the; MAINTENANCE: when you buy an iron pot, before using it it is necessary to clean it. an initial treatment is necessary: it must be washed with hot water and a detergent to remove the anti-corrosion protection thus forming; a non-stick film that does not involve the; food sticking during cooking. Later he will have to be dried and greased with seed oil and then placed on the fire for the burn treatment. When this treatment is finished, the frying pan should not be heated. more be washed with water, but it will need to be cleaned. rub the pan with salt to remove the dirt formed during cooking and it must always remain greasy.
  • As a final point, and no less important than the others, indeed perhaps the most important; interesting of all: thanks to the raw material of which it is; composed, the iron pot is; rather cheap, with excellent cooking characteristics and that lasts over time!
