Two-tone cream with peppers

We continue with the trend of summer appetizers, today we offer a really simple recipe to make. To eat hot or cold depending on your taste or combination. 20 minutes for a tasty, impactful dish to which different dishes can be combined so that it transforms from an appetizer to a main course.

INGREDIENTS FOR 3 PEOPLE:

  • 1 Yellow pepper (about 200g)
  • 1 Red pepper (about 200g)
  • 100g shallots
  • 80g GlutFree stale bread
  • 300g light vegetable broth  ;
  • Thyme, salt, extra virgin olive oil to taste

COOKING TOOLS:

For this recipe we used  immersion mixer by Hamilton Beach

PREPARATION:

  1. Chop the shallot and let it dry by placing it in the microwave for 3’ at maximum power in a container with a drizzle of oil
  2. Peel the peppers with the potato peeler and then cut them into small pieces. Also cut the bread into cubes, then put the peppers separately in a bowl together with the bread and thyme.
  3. Add a drizzle of oil and microwave for 6 minutes. each at 700W.
  4. Once cooking is complete, add about 150ml of light broth to each container and blend everything with the mixer to obtain the two creams.
