BATTERED VEGETABLES: THE RECIPE

VEGETABLES IN BATTER:

INGREDIENTS:

Vegetables to taste (such as zucchini, aubergines, courgette flowers, etc.)

For the batter:

Flour

Salt

Water

Pepper 

Olive oil (for frying the vegetables)

PREPARATION:

First prepare the batter: take all the ingredients and mix them until you obtain a rather solid and not liquid compound since, when you go to add the vegetables, the water they release will contribute to the cooking. to dilute the prepared batter.

Take the vegetables and cut them into wedges (if you choose rather hard vegetables such as the artichoke, the advice is to blanch them for a few minutes before frying them)

In a pan (such as the Agnelli iron pot ) pour the oil and wait until; don't get hot.

Put the previously cut vegetables in the batter one by one and pass them in abundant hot oil.

When they reach golden brown, remove them from the pan, place them on absorbent paper and serve them still hot!
