The blade, composed of 49 layers of steel with above-average performance, meets the highest demands in terms of stability and edge retention. The Friodur ice-hardened blade ensures extreme hardness (approximately 61 HRC) and durability. Equipped on both sides with the Honbazuke trigger typical of MIYABI knife blades.
The triple riveted plastic handle in curved shape, for perfect balance, features high comfort and effortless cutting ideal for all cutting techniques.
The blade and handle of each knife are optimally balanced, so that any cutting job is easy for the user. The Gyutoh is ideal when you want to cut or score meat or fish. With the thin but sturdy blade, you get a fully controllable and clean cut.
